In this episode of Bunch of Lovely Coconuts | Lee Stocking Island | 60 Sailing Saoirse, we leave behind George Town to head north to explore the rest of the Exumas. First stop, Lee Stocking Island. We are one of many sailors taking advantage of the beautiful weather to leave George Town.Our map show that it will take around 6 hours to get there. We have a nice relaxing sail all the way up to our first cut, albeit a little slow. Brandy made us a delicious chia seed pudding snack. We decided to escape from the waves from the ocean side a little early. We went through an unnamed cut just north of Square Rock. The conditions were perfect! We had a little following sea helping us glide through the cut. The water on the other side was breathtaking!

Brandy spotted a good anchorage for us to go get coconuts. So we dropped anchor and launched our new dinghy. Back in George Town we traded out the Beast and got a new to us inflatable dinghy. We’re really happy with it as we feel much more safe and we go a little faster. One day we might be able to afford a larger engine. But what we have works.

We combed the beach for some low hanging fruit…coconuts that is. I made a short climb and chopped some down. But they were way too young for making coconut milk so we just drank them instead.

We had fun exploring the Perry Institute of Marine Science. It has been abandoned for quite some time. It looks like in a blink of an eye everyone that worked and lived there just vanished. Funding may have been pulled after the death of John Perry.

To our delight, The Perry Institute is full of coconut trees! we wonder around collecting the best ones for coconut milk.

In this episode I give you an insider peek on how to make coconut milk from scratch. Step by step on how I do it here on Saoirse. I hope you guys try it out.

We end this weeks episode with our favorite way…a gorgeous stunning sunset.
