We wrap up our time in the Dominican Republic with one last dreamy anchorage in front of the stunning Cayo Levantado, before setting sail on a 2-day open water passage to the Bahamas! Most of this episode follows our journey across the sea — the sails, the conditions, the quiet moments underway — until we finally make landfall in Inagua, Bahamas. After checking in, we head to a peaceful anchorage to rest up... because the real adventure is just beginning.

HOMEMADE GREEK GYROS:

1. Homemade Pita Bread

Ingredients:
• 1 cup warm water (not hot)
• 2 tsp active dry yeast
• 2 ½ - 3 cups all-purpose flour
• 1 tsp salt
• 1 tsp sugar
• 1 tbsp olive oil

Instructions:
1. Mix warm water, yeast, and sugar in a bowl. Let it sit for 5–10 minutes until foamy.
2. Add flour, salt, and olive oil. Knead until the dough is soft and smooth (about 8–10 mins).
3. Let rise in a warm spot for 1 hour (covered), until doubled in size.
4. Divide dough into 6–8 balls, roll each out into a round flatbread.
5. Cook in a hot dry skillet for 1–2 minutes per side, until puffed and golden spots appear.



2. Tzatziki Sauce

Ingredients:
• 1 cup Greek yogurt
• ½ cucumber, grated and squeezed dry
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 1 tbsp chopped fresh dill or mint (or both)
• Salt, to taste

Instructions:
1. Mix all ingredients together in a bowl.
2. Taste and adjust salt, garlic, and lemon juice.
3. Let sit in the fridge for at least 30 mins to blend flavors.



3. Gyro Meat Seasoning + Cooking

Use either chicken, lamb, beef, or pork, thinly sliced or in chunks (or marinate whole pieces and slice after cooking).

Marinade Ingredients (for 500g–1kg of meat):
• 3 tbsp olive oil
• Juice of 1 lemon
• 3–4 garlic cloves, minced
• 1 tbsp plain Greek yogurt (optional for extra tenderness)
• 1 tsp dried oregano
• 1 tsp ground cumin
• ½ tsp paprika
• ½ tsp ground coriander
• Salt and black pepper, to taste
• Optional: pinch of cinnamon or allspice for warmth

Instructions:
1. Marinate meat for at least 2 hours (overnight is best).
2. Grill, pan-fry, or oven-roast until cooked through and browned.
3. Rest meat, then slice thinly for gyros.



4. Assembly

Serve gyro meat wrapped in your warm pita bread, with:
• Tzatziki
• Sliced tomato
• Sliced red onion
• Fries inside the wrap
