As part of our food preservation series, we thought we would share a novel way to keep your dry goods in good condition for a very long time. This is an experiment we are doing this year but we expect it should work well and it is easy and cheap: We are storing our dry food in a CO2 environment. This is great for anyone needing to keep foods fresh a long time, whether you are heading off on a long sailing trip or preparing for the zombie apocalypse.
This works by keeping your food away from oxygen and keeping a high enough CO2 level around it to kill any bugs that might have contaminated the food.
In this video, Clark explains the science and gives a demonstration.

## One year report ##
Everything is perfect. Jasmine rice still smells like flowers. No issues, we will continue to use this method. I’ll report again next year if we still have product, eating a lot of stores due to Covid.

One note, small amounts of carbonic acid is being produced. Water + CO2 = carbonic acid. Pro food preservation guys say (in the comments) that this is helpful. I’ve noticed no change in food quality at all.
