As the days were passing, our chances to cross the Pacific were getting thinner. Lucky for us, the sailing community we found in the Las Perlas Islands of Panama was amazing.
We took over a remote island called Espirito Santo, where we got together to celebrate life.
This for many was the first occasion to do something different in quite a long while, as the lockdown in Panama was still fully enforced.

SV Parlay is a hurricane damaged 2012 Lagoon 450 Catamaran bought in Tortola, BVI at the beginning of 2018. Colin and his friends spent 4 months getting her seaworthy, before setting sail across the Caribbean. Follow our journey as we continue to fix her and eventually circumnavigate the globe!

********** Fillo’s bread recipe!!! **********

INGREDIENTS
– 1kg of flour
– 500g of water
– 2.5g of fresh yeast
– 15-20g of salt

HOW TO PROCEED:
Right, so, before going to sleep start your dough by melting your yeast in the 500ml of water (warmish water will help the process) then, in a big bowl, mix it together with half of the flour (500g), keeping in mind that will double in size.

You now should have a runny, not so pretty looking blob – cover it with some plastic wrap and let it rise overnight (8-12 hours)

The next day, add to the mix the second half of your flour and the salt. Knead it well (a good 10 minutes) and then let it rise for another couple of hours (or until doubled in size).

Now you can crank up the oven (the hotter the better), find a large full metal pot and lid and place it empty in the oven to have it steaming hot.

When the dough is ready, carefully take the pot from the oven (it will be bloody hot so watch out!) and drop the dough in it, close it with the lid, and bake it for about 20-30 minutes.

After that, remove the bread from the pot and let it cook 10-20 minutes longer.
