This black bean burger is a favourite aboard our boat. It’s super easy to make and incredibly delicious! It comes together quickly and can easily be made at anchor. It’s the perfect meal for a boat and something we eat often on Paragon. ⬇️ Recipe below ⬇️

Black Bean Burgers

INGREDIENTS
1/2 large red onion or two small red onions
1 whole chilli pepper (optional)
2-4 cloves garlic
1 15 ounce cans black beans drained and rinsed
1/2 cup plain bread crumbs
1 teaspoon cumin
1/4 rounded teaspoon salt
1/4 teaspoon black pepper
1 large egg

DIRECTIONS
Place onion, chilli, and garlic into a food processor and pulse until finely chopped. Add in black beans and pulse until the black beans are partially chopped, leaving some whole or partial beans. Transfer to a large mixing bowl. (Don’t have an immersion blender/food processor? No worries. Just finely chop the veggies and then mash everything with a fork or potato masher.)

Stir in the bread crumbs, cumin, salt, pepper and egg until well combined.

Divide up the mixture to form 4 patties.

Stove: Heat a lightly oiled pan to medium high heat. Cook for 5 minutes on each side.

Grill: Cook on an outdoor grill for 5 minutes each side.

Serve hot on a bun with desired toppings.
