Common is to have the sails in tandem. This is not neccesarily the best method especially sailing downwind.
Me I do not use selfsteering or autopilit not even sheet to tiller, as it simple and cannot go wrong and it is very satisfying watching how the boat takes care of herself almost like a living thing.
Biplane aircraft uses the same system. Aerodynamically it is better with one wing but this is not a good argument in sailing as few boats have only one sail especially cruising boats.
Accomondation it is good in a small boat to put the masts on the side.
I used side by side sails on the 2018 Exlex that I sailed from Ireland to Madeira 2018. It worked wery well at sea. Problem was in port as the mast of my balanced lugsails had to rake to port and starboard to prevent the yards, the upper spars that extended 40% forward of the mast.
Now with the modified Ljungström rig there is no spars so that problem is no more.
