Ingredients:
1 1/2lb boneless skinless chicken thighes cut into small chunks
1/2C soy sauce (try low sodium)
1/4C Mirin
splash of rice wine vinegar
1-2 Tbsp brown sugar
pepper
garlic chili to taste
1tsp grated ginger (or paste)
2-3 cloves of garlic minced
1 shallot minced
Combine all ingredient
I marinate the chicken in the sauce ahead of time, but reserve a small amount for basting.
skewer the chicken and grill.
