We’re at anchor, it’s turned grey and chilly outside, and we want a delicious, warming meal. Black Beans and Rice hits the spot! This recipe is super simple and fast, and it will satisfy even the biggest appetite. Don’t have the ingredients listed? No problem! Substitute whatever vegetables you have (fresh, frozen, or canned). It all works with this yummy recipe!

Black Beans and Rice
INGREDIENTS

1 cup of rice
2 TBSP oil
1 medium onion, chopped
1 bell pepper, chopped
1/2 medium zucchini, chopped
7-10 small mushrooms chopped
2-4 garlic cloves, chopped
3-4 tsp cumin
1 TBSP oregano
4-6 tsp red wine vinegar
1-2 tsp Tabasco
1/4 cup red wine
2 cans black beans, drained
1 can corn, drained
1 red chilli or jalapeño, optional

Optional toppings
1/2 avocado, sliced
shredded cheese
small handful of cherry tomatoes, chopped
1/2 small red onion, chopped
tortilla chips

DIRECTIONS

• Cook 1 cup of rice according to the directions,
• Heat oil in a pan over a medium high heat. When hot, add the onion, red pepper, and salt and pepper to taste. Stir and cook until just soft.
• Add garlic to the pan and cook for 1-2 minutes
• Add the zucchini and mushroom and cook until just softened
• Add the black beans and corn. Stir well.
• Add the cumin, oregano, and more salt and pepper to taste. Stir well.
• Add the chilli flakes, Tabasco, and red wine. Stir well, lower heat and cook for 5-10 minutes.
• Add the beans and rice to a plate and whatever toppings you like. Enjoy!
