Chicken and Rice with Broccoli

INGREDIENTS
2 medium onions, roughly chopped
4 large cloves of garlic, roughly chopped
1 tsp salt
1 tsp pepper
1 large jar of canned chicken or two small cans
2 heads of broccoli, chopped into large pieces
1-2 cups cherry tomatoes
2 cups chicken broth
1 cup rice
Parmesan for grating (optional)

DIRECTIONS
Heat the oil in a pan over medium-high heat
Add the onions to the pan and cook for 5 minutes or until softened. Add salt and pepper to taste
Add garlic to the pan and cook for 1-2 minutes
Open the chicken and save any broth for later.
Add the chicken to the pan and break into small pieces
Add the broccoli and chicken broth to the pan. Cover and cook for 10 minutes
Add the rice and stir well until the rice is in the broth
Add the tomatoes
Cover and cook for 10-15 minutes or until the rice is cooked, stirring occasionally while the rice is cooking.
Serve topped with grated Parmersan. Enjoy!
