Super simple, no refrigeration needed, easy to make (even offshore!) one pot meal? Yes please! Did I mention how delicious this is? Or how it only takes about 30 minutes from start to finish. And is just as simple, and tasty, to make vegan. Really, I think this recipe is the perfect cruiser friendly meal!
CUBAN CHICKEN
1 TBSP olive oil
1 onion, chopped
3 cloves garlic, chopped
1 (400g/14.5 oz) can diced tomatoes
1 (340g/12 oz) can chicken chunks, drain broth into a bowl and save for later
1/2 cup chopped red bell pepper
1/2 cup dried fruit (cranberries, raisins, apricots, etc.)
1/2 cup green olives, sliced or whole
1 TBSP red wine vinegar
1 tsp ground oregano
1 tsp ground cumin
2 bay leaves
1 cup rice
Heat olive oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add garlic and continue to cook and stir until fragrant, about 1-2 minutes.
Stir tomatoes, chicken, red bell pepper, dried fruit, olives, red wine vinegar, oregano, cumin, and bay leaves into the onion mixture; cook until heated through, 5 to 7 minutes more. Remove and discard bay leaves before serving over rice.
**You can put rice into the pot to cook with everything else, but add 2 cups chicken broth and simmer 20 minutes until the rice is done. One less pot to wash!
