Aussie Breakfast Recipe:
Sweetcorn Fritters & Poached Eggs with pickled onion, avocado, coriander, sour cream and Togarashi
For the fritters:
1 cup / one whole cob of corn (grilled and stripped)
Handful of cilantro
Handful of sliced scallions
¾ cup plain flour
1.2 tsp baking powder
½ tsp salt
2 eggs
⅓ cup milk
Togarashi / Paprika / Old Bay to taste
Put the sliced scallions, cilantro & corn into a large mixing bowl.
Whisk together the dry ingredients and add to the corn.
Whisk together the wet ingredients and add to the corn
Gently fold together with seasoning of choice (togarashi / paprika etc).
Spoon the batter onto a preheated frying pan and watch carefully, flipping when ready.
