Burger Aioli:
Whisk two egg yolks
Add in neutral oil very SLOWLY at first (olive oil or avocado oil)
*the more oil you add, the more aioli you’ll make*
Keep adding and whisking in oil until it’s yielded the amount you want
Mince about 2 large cloves of garlic
Add several squeezes of lemon juice to taste (I think I used 3 slices)
Mince and add gherkins (I used 5 small gherkins but a regular kosher pickle would work)
Add habanero or any hot sauce of choice to taste
Salt & pepper
Keep in the fridge and use for a dipping sauce for fries, fish, or your next tuna salad!
