How to Clean a Lobster and Our Fave Boat Bread Recipe - Ep 20

During our stay at Rudder Cut Cay, which is David Copperfield’s private island and home to the underwater mermaid and piano sculpture, we had a bunch of fun learning to use our spear pole and catching lobster. A fellow Canadian sailor taught us how to efficiently and easily clean our lobster catches. We also show you our favourite boat bread recipe. There’s a ton of sugar in this recipe, probably why it tastes so good, but we lessen the sugar a bit and we literally make this every two days or so!

RICH EGG BREAD RECIPE
– Makes one loaf (8″x4″ or 9″X5″ loaf pan)
INGREDIENTS
– 3 to 3.5 cups all purpose or bread flour
– 1 pkg instant rapid rise yeast (2 1/4 tsp)
– 1/4 cup white sugar
– 1.5 tsp salt
– 1 large egg
– 1 cup warm water (120 to 130 degrees F)
– 2 tbsp olive oil

DIRECTIONS
1. In a large mixing bowl, mix together 1.5 cups of the flour, the yeast, sugar and salt. Add warm water and oil. Beat with an electric mixer on low speed for 1 minute (or just hand mix until well blended and smooth)
2. Add the egg and beat until smooth (or hand mix once again until smooth)
3. Stir enough of the remaining flour until the dough is easy to handle
4. Place dough on a lightly floured surface and knead for 10 minutes or until the dough is smooth and springy
5. Grease a large bowl with oil/cooking spray and then place the dough in the bowl, turning the dough to grease all sides (at this point, dough can be refrigerated up to 24 hours) Cover bowl loosely and let rise in a warm place (about one hour or until dough has doubled). Dough is ready when indentation remains when touched
6. Grease bottom and sides of your loaf pan with oil/cooking spray.
7. Gently push fist into dough to deflate. Flatten dough with hands/rolling pin into an 18″X9″ rectangle. Roll up tightly beginning at the 9″ side. Pinch edges of dough to seal and pinch each end of the roll to seal. Fold ends under the loaf. Place loaf seam side down, in pan. Cover loosely with plastic wrap and let rise again in a warm place for an hour or until dough has doubled in size.
7. Move oven rack to low position so that the top of pan will be in the centre of the oven. Heat oven to 375 degrees F.
8. Bake for 30-35min or until the loaf is deep golden brown and sounds hollow when tapped. Remove from pan to wire rack
