Smoked Salmon, Brie and Baby Spinach Pancake for Pancake Day from the narrowboat kitchen of Nutshell.
This is a very easy recipe to make and is absolutely delicious for a gourmet breakfast or mid morning brunch.
You can substitute the smoked salmon for a good quality ham. Also, sour cream by itself, makes an easy sauce to go with it as an alternative.
Ingredients:
PANCAKE BATTER
200ml plain flour, sifted
2 eggs
200ml full fat milk
75ml water
50g butter, melted
pinch of salt
SAUCE
180g cream cheese
200ml sour cream
1 lemon
Freshly ground black pepper
FILLING
200g smoked salmon
120g brie
100g baby spinach
