Our first real food cooking vid – Pumpkin, Leek and Spinach Quiche

Cooking in a Nutshell – Pumpkin, Leak and Spinach Quiche

This is a simple recipe which I often make as it is easy to do in a narrowboat kitchen because it only uses the gas oven and hob. Great hot or cold served with a fresh green salad.

You can vary this recipe by using grated cheddar and sour cream instead of the ricotta and swapping in your choice of vegetables. Broccoli, pumpkin, sundried tomatoes and onion are delicious too.

A smattering of grated fresh parmesan on the top before serving is lovely.

I sometimes vary the seasonings to spice it up a bit.

Ingredients:
Butternut pumpkin
100g spinach
1 leek
8 eggs
1/3 cup milk
250g ricotta
3 cloves garlic
Heaps of cracked black pepper
1 sheet ready rolled puff pastry
Spray oil
Oven gas mark 6, 200°C
Glass of wine [optional]
