Exploring the Hunter River: Bush-Cook Style Chicken at Ivy Cove Beach
In this episode, we find ourselves leaving our anchorage and making our way towards the Hunter River in the stunning Kimberley region of Australia. This area is known for its picturesque beaches and unique boab tree inscriptions, and today we’re planning to visit Ivy Cove Beach.
Unexpected Tidal Rush at Hunter River
As we navigate the Hunter River, we’re amazed by the swift tidal rush that quickly fills the passage. The whirlpool in the middle is quite a sight to behold. In just minutes, the water changes from still to rapidly flowing, reaching speeds of up to 9 knots. It’s truly an incredible natural phenomenon.
Catching Fish and Spotting Sharks
The abundance of marine life in the Hunter River is evident as we catch fish and spot several sharks nearby. Fishing enthusiasts will enjoy this area, but be sure to handle the fish with care and respect.
Narrative Moment: Ivy Cove Beach
We take a moment to appreciate our surroundings at Ivy Cove Beach, an idyllic spot with taller vegetation and a slightly cooler climate than other areas we’ve visited. While there, we discuss the history behind this location’s name and share our plans for cooking a chicken bush-style.
Cooking the Perfect Bush-Style Chicken
To prepare our 2.5 kilogram frozen chicken, we first spatchcock it and let it thaw. We then build a fire, place the chicken on the coals, and cook it until it reaches an internal temperature of 77°F (25°C) in the breast. The process takes about an hour, but the end result is well worth the wait.
Enjoying Lunch at Ivy Cove Beach
With our perfectly cooked bush-style chicken ready, we enjoy a delicious lunch paired with fresh salad and beans. Cooking outdoors in such a beautiful location is the perfect way to appreciate nature’s bounty.
Choosing the Perfect Spot at Hunter River
After our satisfying meal, we reflect on how fortunate we were to find a great spot for beach camping at the Hunter River. The water depth near our anchorage was just over 1.6 meters and remained shallow in the surrounding area, providing an ideal location for our stay.
